Since I don’t have a cuisnart or any other automated slice and dice device- things like Cheese Graters tend to get old and rusty. The most eco- friendly thing you can do is keep from rusting by drying immediately, scrubbing off rust as soon as it occurs, try soaking on coke or baking soda to salvage as much as possible.
But if you have more than one cheese grater and it is in usable condition consider donating or even selling for scrap metal. Cheese graters can be recycled and you should check with your local recycling company to see if they take.
